Coffee, tacos and sushi all under one roof? A new food hall is set to open in Longmont

Can’t decide between burgers, pizza or tacos for dinner? All three options will be accessible under one roof at Parkway, a new food hall opening in May at 700 Ken Pratt Blvd. 

“What we’re really trying to do is bring a diversity of flavors. We’re going to have burgers, pizzas and tacos because that’s what people love, but we’re also going to bring diversity so that people can find their new favorite foods at Parkway,” said Pat Garza, CEO of National Food Hall Solutions.

Chile Con Quesadilla, an award-winning taco establishment, and Cleaver & Co., a classic burgers, fries and milkshake business, are two of eight food concepts making Longmont their new home. 

Mediterranean cuisine, barbeque and sushi options will join the staple foods, accompanied by a variety of drinks at a bar and coffee shop. 

Parkway designed an event space that was essential to meeting Longmont residents’ needs, according to Garza. The public will be able to host events such as business meetings, music shows and weddings, all while staying true to the family-centric culture of Longmont.

“Food halls are interesting in the sense that they can take on different personalities throughout the day. For lunch, we’re going to have a business crowd. For dinner, you may have a happy hour crowd and on the weekends, it’s certainly going to be family-driven,” Garza said.

Parkway is expected to open around Cinco De Mayo, as the warm weather emerges. Although hours may be subject to change, the food hall is expected to open from 11 a.m. - 9 p.m. on Sunday - Thursday, with longer hours on Friday and Saturday.
